Almond Joy Smoothie

If you make a drink in the blender and it doesn’t have ice cream in it, that counts as a smoothie, right?  I love Almond Joys, but I used to hate them as a kid.  One Halloween, there was a ton of them left in our family’s candy bowl because no one wanted them.  Since there were so many left, I ate one (or…5) and ever since then, I love them.  For the record, I really do know that this isn’t the most healthy smoothie.  But, it’s a lot healthier than it could be.  Sometimes, you just need some chocolate!  If you’re someone who likes Almond Joys, be sure to try out this Almond Joy smoothie!

Almond Joy Smoothie

Yield: 2 smoothies

Ingredients

  • 1 cup coconut milk
  • 1/2 cup almond milk
  • 2 tablespoons almond butter
  • 2 tablespoons shredded coconut
  • 2 tablespoons cocoa powder
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups ice

Instructions

  1. Combine all ingredients into a blender, and blend until smooth.
  2. Pour into glasses and serve.
  3. Top with more shredded coconut and an almond, if desired.
